Zucchini Bread For Everyone

Have you ever tried zucchini bread?   Many people turn up there nose at the thought of zucchini being in their bread but they are badly mistaken.  Zucchini adds moisture, flavor and texture to almost any bread recipe.  I have included a basic zucchini bread recipe that has been featured in many cookbooks.  I also have added three variations of zucchini bread that your household is sure to enjoy.  Zucchini can be used in a lot of dishes, such as pasta entrees.  Be sure to try the Cheddar Zucchini Bread, it’s the best!

Classic Zucchini Bread

3 eggs

1 cup oil

2 cups sugar

2 cups peeled and grated zucchini.  Be sure to drain and dry.

3 tsp. vanilla

2 tsp. cinnamon

1/2 cup nuts

3 cups flour

1 tsp. baking soda

1 tsp. salt

1/4 tsp. baking powder

Mix together eggs, oil, sugar, zucchini  in the bowl of your stand mixer. Sift together flour, soda, salt, cinnamon, and baking powder in a separate bowl. Add The dry mix to the wet mixture and set your mixer on medium. Stir in vanilla and nuts. Bake at 325 degrees for 1 hour. May need 15 minutes more, it will depend on how much moisture was in the zucchini. Cool completely before freezing. Makes 2 loaves.

Zucchini Cheddar Bread

1 c. finely chopped onions.

1/4 c. butter.

2  1/2 c. Bisquick.  Any baking mix will work but I really like Bisquick

1 tbsp. fresh parsley, finely diced.

1/2 tsp. thyme.

1/2 tsp. basil.

3 eggs.  Bring to room temperature before mixing.

1/4 c. milk.

1 c. grated cheese.

1 1/2 c. to 2 c. shredded zucchini.  Make sure to drain and dry well.

Saute onions in butter until just starting to turn light brown. Cool and set aside.  Mix all of the dry ingredients in your stand mixer’s bowl.  In your stand mixer bowl add all of the wet ingredients (plus the zucchini) and mix well.  Blend in the dry ingredients and the onions and mix for 1 minute.  Pour into an 8×8-in. greased baking pan and bake at 400 degrees for 40 minutes.  This should make two loaf pans of bread if desired instead of a pan.

Chocolate Chip Zucchini Bread

This is really a dessert, the chocolate chips add a rich sweetness to the bread.

2 cups grated zucchini, dried and drained.

3 eggs

1 cup applesauce

2 cups sugar

1/2 cup vegetable oil

3 teaspoons cinnamon

1/4 teaspoon baking powder

1 teaspoon baking soda

1/2 teaspoon salt

3 1/4 cups flour

6 ounces chocolate chips

1/2 cup cocoa

Stir together all of the dry ingredients and set aside.  In your mixer bowl add all of the wet ingredients plus the zucchini.  Add the dry ingredients and mix well.  Add the chocolate chips and stir. Bake at 350 degrees for 45 minutes. Decrease temperature to 300 degrees and bake an additional 15 minutes.

Pineapple Zucchini Bread

3 eggs

1 teaspoon baking soda

1 cup grease

1/4 teaspoon baking powder

2 cups sugar

1 teaspoon salt

2 teaspoons vanilla

3 cups flour

2 cups zucchini, grated

3 teaspoons cinnamon

1 1/2 cups sliced walnuts (optional).

1 8-ounce can pineapple, drained.

Preheat oven to 350 degrees. In a big bowl, beat eggs till frothy. Stir in oil, sugar, vanilla, and zucchini. Add baking soda, baking flour, salt, and powder. Add nuts and pineapple. Put into two floured and greased loaf pans. Bake for 1 hour.
