One trick that kitchen pros use when it comes to roasting vegetables is to use their cast iron skillets. Cast iron is a fabulous material for cooking and it can be used on the stove top as well as in the oven. Lightly oil the bottom of your skillet, place your chopped fresh vegetables in the pan, season and roast at 350 degrees for 15-20 minutes. Cast iron is an excellent heat conductor and you will have even heat to cook your vegetables.
