Roasted Spring Vegetables

Roasted Vegetables Side Dish Meal Prep.  One of the easiest and most delicious ways to prepare fresh spring vegetables is to roast them in the oven.  This often overlooked method is so simple and the results are so wonderful!  Check out the fresh veggie section at your local supermarket or, even better, at your local farmer’s market.  Choose some of your favorite veggies and you are on your way to a fabulous treat.

Scrub the veggies well (they may look clean but you still need to wash them).  Using your sharpest knife and a clean cutting board you need to cut and chop the vegetables into similar sized shapes.  This helps to ensure that they will all be done at the same time.  Line a sturdy baking sheet with parchment paper or tin foil, add your chopped veggies, flavor with spices and oil, then roast for 15-20 minutes at 350 degrees.  What could be easier?

Some cooks will add the spices into a freezer bag, throw in the veggies and then toss.  This works well but you still want to sprinkle spices and a bit of oil on top of the veggies before roasting.
