Couscous Salad with Roasted Vegetables and Chickpeas

Listen up, people: This is one for the Dinner Hall of Fame. First of all it’s healthy and easy (check, check). Trying to eat less meat? Check!
There are some wonderful recipes that are both healthy and delicious and this is one of them.  Take advantage of the fresh vegetables that can be found at your local farmer’s market.  You will find that roasting them will bring out the freshest of flavors, you really just need a good baking sheet, a sharp knife and a few key ingredients.
